Our suggested parameters for commercial cultivation allow for two flushes. Temperature can fluctuate between 55F and 65F and Humidity should be maintained at 95-100% for primordia formation. One way we suggest achieving this is by cutting a large X along one long side of the block, through the plastic and into the substrate layer about a 1/4 of an inch (this scaring of the block is right where primorida will begin to form) and like lions mane, fold the remaining plastic at the top of the block down and under the side opposite the large X. If it's difficult to maintain 100% humidity for pinset, use a backpack or bottle spray to hydrate the blocks where the X has been cut several times a day until pins form. Once primordia begin forming in clusters, you can stop spraying and lighten the humidity in the room to between 85-90%. Chestnut mushrooms can withstand a fuctuation in co2 count in the fruit room, so we suggest keeping it between 600 and 1000ppm.https://www.shroomery.org/forums/showflat.php/Number/25084826
After you harvest you first flush, unfold the folded under flap and cut the top of the bag off to remove the block. carefully dunk and soak the block in cold water for a few minutes (a dilution of bleach might also be beneficial if your having trich problems in your room.) Then put the dunked block back into the grow bag so that the X is exposing the opposite side of the block for a fresh cluster of primordia to form.

It just says to make sure to harvest before the cap unfolds - so they last longer...
